I am OBSESSED with these. I have been gluten free pretty strictly for almost ten years now, and have cycled between Paleo, Keto, and healthy lifestyle eating. Usually this meant the amount of bagel action I got to partake in was pretty darn low. I didn't mind too much usually, since there really aren't any good bagels available here on the islands... but growing up it was pretty rare to find me WITHOUT a bagel in my hand. It was one of my favorite foods for sure...
The beginning of my strict ketogenic diet journey left me a little lacking in the "comfort food" arena. I stumbled across what is known as "FatHead Dough" in the keto world - dough made from cheese?! I had to try this... After many pizza experiments and flat bread devouring, I landed on the Keto Bagel magic posted below!

Net 6 carbs per bagel with 100% comfort
KETO EVERYTHING BAGELS
2 cups Almond Flour
1 TBS Baking Powder
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Italian Seasoning
3 Large Eggs
5 TBS Cream Cheese
3 cups Shredded Mozzarella Cheese
3 TBS Trader Joe's Everything Bagel Seasoning
Preheat oven to 425° - Line a baking sheet with parchment paper
Combine the almond flour, baking powder, garlic powder, onion powder, and Italian seasoning in a Mixing Bowl. Mix until well combined.
Crack one of the eggs into a small bowl and whisk. The other two eggs will go into the dough.
Add the cheese and cream cheese to a microwave safe bowl: Microwave for 1 minute and 30 seconds. Remove from microwave and stir to combine. Return to microwave for 1 additional minute. Mix well.
To the mixing bowl, add the remaining 2 eggs and the almond flour mixture. Mix together well.
Divide the dough into separate portions, 6 total.
Roll each portion into a ball. Use your hands to form a hole in the center to create a bagel shape.
Brush the top of each bagel with the egg wash.
Sprinkle each bagel with Trader Joe's Everything Bagel Seasoning.
Place in the heated oven, and bake for about 12 to 14 minutes or until the bagels turn a golden brown.
As Always, I recommend eating these in moderation when on a low carb diet. These contain dairy, so are not fully Paleo friendly, but they are 100% gluten free!!
